The oil is made from olives that are handpicked just at the right point of their maturation. As soon as they have been harvested, the olives are then carefully processed in the mill in order to obtain a quality product with a fruity and fragrant taste.
The olives do not undergo any treatments other than washing and crushing. The pressing takes place using mechanical processes without the addition of any chemicals, guaranteeing the highest quality of the product, which maintains its natural unaltered properties.
Olive oil can sometimes have a cloudy appearance. This does not affect its quality, on the contrary, it is a guarantee and it demonstrates that it has not been filtered. Many people greatly appreciate unfiltered oil because it has a more intense flavour and a pleasant aroma, making it a more genuine and healthier product.
Unfiltered oil is like a new wine, it must be consumed sooner in order to fully enjoy all of its qualities. Over time, even an unfiltered oil may become ‘limpid’: this is due to the natural filtering process, or to the natural settling of the particles on the bottom of the bottle.
The oil has an intense green colour with a golden sheen.
Excellent drizzled raw on bruschetta, fresh vegetables, soups and as a dressing for salads.
